Giovanni has been working in the scientific research sector for over ten years. His work in recent years has focused above all on the production of non-alcoholic beer, on the production of malt starting from barley and minor cereals, such as rice, teff, quinoa, ancient grains, spelt, einkorn, etc… Currently, in addition to scientific research activities, he is panel leader at CERB, He is carrying out consultancy activities at beer and malt production plants.
