Shunji Fujioka received a master’s degree from the Graduate School of Informatics, Kyoto University, Japan. He joined Suntory Spirits Ltd., in 2013 and started his career at Kyoto Brewery. Since 2016, he had been working in the Beer Development Department. From April in 2022 he is working in Technical University of Munich as a guest researcher.
At EBC in 2019, he had a poster presentation about the effects of flavonoids from herb and spices to the crispness of beer, and at EBC in 2022, he had a lecture about the relationship between the bitterness quality and cyclic bitter derivatives of iso -α-acid.
