To this end, we are using only natural raw materials such as spices, malt, hops, fruit extracts and natural flavors. These natural and noble components are the basis of our “brand makers”.

The doses for this late differentiation are very low and are usually between 0.5 and 20 ml per litre, which does not dilute the base beer.

Hop France

HopFrance is a hop growers cooperative in Alsace-France. The hops are grown by 38 independent family-owned farms.

The Alsatian terroir & climate conditions are particularly suited to aroma hops.

Strisselspalt, the most famous Alsatian hop, has a spicy, slightly lemony and herbal aroma. It is ideal for late & dry hopping on Lagers and Pilsners.

Aramis was developed for its non-lingering bitterness. Aramis has intense spicy, floral and slightly citrusy notes. It is particularly well for Pils, lagers, wheat beers where a subtle but distinctive aroma is desired.

Triskel is fruity and floral. It has a crème caramel, grape and plum profile. The aroma of Triskel is complex & works well for most beers when a fruity, harmonious & pleasant note is expected.

Barbe-Rouge is a unique hop. Used in dry hopping, it develops notes of red fruits, strawberries & raspberries & strawberry jam.

Beers using Mistral will have notes of rose, lychee & melon. A character very similar to Gewurtztraminer wine!

Elixir, the latest release, is much more citrussy. With aromas of exotic fruits, passion fruit, mango& tangerine, Elixir will be the good choice for IPA’s, NEIPAS’, hoppy Lagers, Pale Ales or even Triples beers.

Most of these varieties are grown under organic farming conditions.

Founded in 1962 IFBM the French Institute of Brewing & Malting is a prominent independent research & training center operating at European and international levels. IFBM carries out consulting, audits, technical studies and research programs for food industry companies, especially in the barley to beer chain. It also exercises expertise in the quality control of raw materials (malting barley and milling wheat especially) and phytopharmaceutical products. In addition to R&D and analytical labs, our facilities include a unique pilot plant with malting and brewing equipments from laboratory to industriel. It allows the production of malting and brewing batches a different scale from 0.1 to 650 kg or from 20 liters to 20 hl. These facilities are also used for training. Hops cones are used in beer as they provide components that improve microbiological stability, bitterness, flavor, aroma. Hop aroma has become a key parameter to define a distinctive flavor of a craft beer and is primarily driven by the volatile oils found within the hop cones. Dry hopping has become a popular practice for craft brewers who produce hop-forward beers. Despite that, dry hopping is a relatively inefficient process due to the poor extraction efficiency of volatile oils into beer. Additionally, hops pellets are also very hydroscopic and when high dry hopping rates are used, beer loss becomes a critical variable for brewing yield. The innovative True Hopping technique delivered by the ETHOSTM X 2.0 and ETHOSTM XL by Milestone enables brewers to maximize hops utilization by using the essential oils extracted from their own hop varieties. This reduces the amount of raw hop pellets added in dry hopping, increasing brewing yields and delivering consistent flavor profiles and blends to their craft beers. It also creates a valuable tool for new product development where beers with very different flavour profiles can be created from a single brew in a very short time.
