This visit will start with a look to Brasserie du Pavé (southern of Lille), a 5000 hl brewery founded 10 years ago followed to the discovery of “Aux Enfants Terribles” (eastern of Lille), a brewpub, restaurant and event hosting venue opened in an old farm at the start of 2023. A lunch will be served at Aux Enfants Terribles before the bus brings participants back to Lille Grand Palais.
Brasserie du Pavé
Brasserie du Pavé is a microbrewery located in the Nord region not far from Lille. It brews craft beers (Blond, Triple, IPA, Amber…) from the PVL. These beers regularly win medals in national and international competitions.
Brasserie du Pavé was created in 2013 by Dominique Dillies on a farm in the heart of Pévèle. This craft brewery is part of a territory built around strong values and a unique brewing tradition.
The second page of Brasserie du Pavé opened with the move to a larger brewing facility in Ennevelin at the end of 2018. From the very first brews, Brasserie du Pavé has had a rigorous requirement for the choice of ingredients, sourcing as much as possible locally, with local partners.
The first brew of PVL Blonde on the new site was released in March 2019. PVL Blanche, a craft beer with fresh ginger and hibiscus flower, is the 8th and last beer in the permanent range, created in June 2019.
These are craft beers with character, both in terms of flavor and visual appeal. Today, development capacity has quadrupled, but the fundamental principles remain the same. An increase in production linked to the desire to develop brands over a wider territory. A natural ambition based on the brewery’s local reputation and the desire to constantly renew itself.
Today the brewery employs 7 people, including Alexis and Jean-Francois WALRAEVE, the brewery managers and co-managers, two brewers, a production apprentice, a sales apprentice and a marketing apprentice.
We distribute PVL throughout France, with a 50/50 split between kegs and bottles. You can find our entire range in partner wine shops and deli. And if you’d like to drink a PVL on draught, you can find it in CHR.
In a few figures, the Brewery is :
- 300.000 hand-sealed bottles with mechanical corks
- 3360 Hectoliter of brewing capacity
- 50 recipes tested per year
- 14 different types of beer
